When Seven Sundays sent me their muesli variety pack, I knew I wanted to put together a simple, but healthy, overnight oat breakfast. I could have gone the traditional bircher route for one of my favorite UK breakfasts, but instead, I thought the oats would have more fun softening up in some healthy layers of yogurt and breakfast pudding! How to make it an A+: Healthy and chocolate really can go together! Upgrade these parfaits with your favorite fruit topping, such as additional sliced bananas or raspberries!

Total Time: 10 minutes, plus chilling overnight
- 2 Ripe Avocados
- 1 Ripe Banana
- 4 Tbsp Cacao Powder
- 2 Tbsp Honey
- 1/2 tsp Vanilla
- 1/4 tsp Cinnamon
- 2/3c Whole-Milk Yogurt
- 2/3c Seven Sundays Early Riser Dark Chocolate Gluten Free Almond Muesli
- 1/2 Tbsp Honey
- Honey, for drizzling
- Fresh fruit, such as raspberries or sliced bananas, if desired
Prepare pudding by blending all of the Chocolate-Avocado Pudding ingredients in a food processor until smooth.
Spread half the pudding across the bottom of a medium glass bowl (with lid). Sprinkle with half of the muesli (pressing the oats down slightly). Carefully top the muesli with half of the yogurt, spreading across the entire surface. Drizzle with the honey. Repeat with remaining pudding, muesli, then yogurt. Cover the dish and chill overnight.
To serve, remove the lid. Drizzle with honey. Top with fruit, if desired. Enjoy!
