I don’t know what made me crave a spicy, hot soup on another day of this sweltering summer, but here we are. I think this morning’s hangover required something easy and comforting, and Joanna Gaines’s Chicken Tortilla Soup fit the bill. This soup from the Magnolia Table Cookbook may be hearty, but it has healthy ingredients and a thin broth, so it doesn’t feel too heavy for tank top and short shorts weather. With simple ingredients (like rotisserie chicken) put together in just one pot, you’ll have a well-rounded dinner for the whole family ready in under thirty minutes!

How to make it an A+: Sour cream is a must. It takes the dish to another level. Sprinkle the dollop with finely chopped red onion, tomatoes, and jalapeΓ±os along with the suggested ingredients.
