When I let my pregnancy cravings get the best of me, I often try to reset my body, and frame of mind, with recipes from James Duigan’s Clean & Lean Pregnancy Guide. The motivational wellness book has some of the healthiest recipes I’ve ever encountered. Unfortunately, I need BIG and POWERFUL flavors in most of my meals, and these recipes often fall a little flat. My husband couldn’t have been happier with most aspects of this healthy Chicken, Pomegranate and Feta Salad, but for me, I needed the modifications below.
How to make it an A+: This salad leaves a lot to be desired, but that is because it’s so darn healthy! The chicken isn’t even seasoned with salt! Give the recipe an immediate boost by adding salt and olive oil, and swapping out the pomegranate seeds for dried cranberries. Okay, it won’t be as healthy, but you’re eating a salad so give yourself some credit. Feel free to add some chopped nuts, seeds–whatever you have in your cabinets. And, when you’re not pregnant anymore, swap the feta for blue cheese! Is this even the same recipe….
