Cheesy Guacamole

Ahh, guacamole. One of the most universal appetizers and toppings around. Put it on a chip, on a burrito, on a burger, on toast, or on a spoon, and serve it to pretty much anyone, and you’re a winner. I saw Kristen Bell’s shirt on instagram this week, and it said “You can’t make everyone happy. You are not an avocado.” And, boy, is that true. Avocado’s big sister takes an interesting turn from Chrissy Tiegen’s cookbook, Cravings. Marrying avocados and cheese. I. Do. 

 

Rating: A-

 

How to make it an A+: It’s really good. Not the best guac I’ve ever had, but really good. The cheese isn’t the breakout star you would hope for, but since it’s already a crazy addition, why not kick up a notch with some crumbled bacon!
