Cheesy Cheeseless Scrambled Eggs with Burst Cherry Tomatoes

 

 

Another hit from Chrissy Tiegen! I am thoroughly impressed with her Cravings cookbook. She takes ordinary dishes, and upgrades them with decadent flavors and rich textures, giving a casual gourmet air to every meal you put on your table. Take these scrambled eggs, for example. You really do think there’s cheese inside with the creamy texture provided by an obvious substitute: cream. A question my husband posed, however: Why not just put cheese in them? Heavy cream isn’t healthier, you aren’t all of a sudden turning the dish vegan. He had a point. Maybe it’s less processed or cheaper? Not sure, but it tastes delish and that’s most important in my book.

How to make it an A+: Skip the tomatoes. It takes amazing, soft, and creamy eggs, and gives it an unnecessary Southern twist. Don’t pigeonhole yourself.
