Butterscotch S’mores Pudding Cups

Who doesn’t love the taste of S’mores? Seriously, show me someone that doesn’t love the combination of chocolate, marshmallow and graham crackers? Make it a refreshing pudding version, I’m there. Add a butterscotch layer for good measure, and off to dessert heaven we go. So, if you’re like me and are now drooling, try out my recipe for Butterscotch S’mores Pudding Cups below!

Recipe:

Serves 6

Active Time: 45 minutes

Total Time, including cooling and chilling: 5 hours

Ingredients-

Pudding

  • 1 1/3c Sugar
  • 1/4 c Cornstarch 
  • 1 Eggs plus 1 Egg Yolk
  • 3 c Heavy Cream
  • 1/4 c Salted Butter
  • 1 tsp Vanilla
  • 1 cup Nestle Toll House Butterscotch Flavored Morsels
  • 1 cup Nestle Toll House Milk Chocolate Morsels

To Assemble

  • 2 cups Mini Marshmallows
  • 1 sleeve Graham Crackers
  • 1/4 cup Butter, melted
  • 1/8 cup Condensed Milk
  • 6 small Glass Containers

Method-

Begin by making the pudding base. Combine the sugar, cornstarch, egg, egg yolk, and cream in a large saucepan. Cook over medium heat, stirring constantly, until thickened, approximately 8 minutes. Remove the pudding from heat and stir in the butter and vanilla. Set aside. Melt the butterscotch in one microwave-safe bowl, and the chocolate in another, by heating in the microwave in fifteen second increments, stirring in between, until melted. Divide the pudding into two large mixing bowls and quickly stir the melted butterscotch into one bowl, and the melted milk chocolate into the other. Allow to cool slightly before assembling.

To assemble, toss the crumbled graham crackers and the melted butter together, and sprinkle on the base of each serving cup. Drizzle a little condensed milk over top. Next, divide the chocolate pudding between the six cups. Next, add a 1/4 cup layer of marshmallows, another layer of the graham cracker mixture, and another drizzle of condensed milk. Add the butterscotch layer of pudding. Top with the remaining marshmallows and a drizzle of condensed milk to serve. Chill for approximately 4 hours before serving.
