Chocolate-covered Katie is among my favorites, and you will see her featured here A LOT. With her recipes, you can eat healthy and still indulge in brownies, pies, cakes, Chinese food, dips, cookies, mac & cheese, etc. Today, I tested her Blueberry Morning Baked Oatmeal, and found, in line with all her other creations, it was an instant hit that left us feeling full without feeling guilty!

How to make it an A+: The recipe gives the choice of fresh or frozen blueberries. I opted for frozen, trying to complete all my grocery shopping early in the week, but they really need to be fresh. The recipe gives a range of 3-6 tablespoons sweetener of choice, so I opted for 3 Tbsp of agave syrup, that I had burning a hole in my cabinet. I was happy with this, but you could easily use honey, xylitol, sugar, anything. I used the vegetable oil option and included the optional cinnamon and coconut. So, other than the emphasis on fresh, the recipe is great, but if you’re a beginner, the options can leave you feeling a little overwhelmed. Hopefully this helps. Next time, I would love to include some raspberries for a very berry version of sweet and tart.
