My husband began his 45th year with a full stomach! He thoroughly enjoyed a night at home filled with family and food! See below with details on his birthday menu which included Real Simple magazine’s Tequila Queso Fundido, Goya’s Spanish Garlic Shrimp, Better Homes & Gardens’ Caramelized Green Beans, and Butternut Bakery’s Funfetti Cake!

Tequila Queso Fundido
Rating: B
How to make it an A+: I prefer a queso dip over a melted, stringy, fundido, but that aside, this one needs more of a kick for me! I’d use finely chopped jalapeños, maybe cooked for a minute, maybe not!

Spanish Garlic Shrimp
Rating: A+
How to make it an A+: Delicious! Serve with crusty bread!

Caramelized Green Beans
Rating: B+
How to make it an A+: The flavor is great, but it needs to cook MUCH longer than recommended.

Funfetti Cake
Rating:A-
How to make it an A+: The cake is SO good, but the frosting is too sweet and overpowering. I’d make the cake in two fat layers instead of three, and use less sugar for the frosting. Or, better yet, add some cream cheese!
