Banana Espresso Bread

When I was invited to develop some recipes for Nestlé Toll House, my wheels immediately started turning thinking of all the chocolate chip goodies I wished were out there. But, did you know Nestlé isn’t just about your basic chocolate grades? The possibilities are even more endless with options like Espresso Morsels. Espresso equals breakfast and breakfast equals a baked bread in my mind, so that is how my Banana Espresso Bread came to be. Recipe below for a delicious, moist, chocolatey, morning pick-me-up!

How to make it an A+:  The most moist bread in all the land! 

Recipe:

Makes 1 Loaf

Active Time: 15 minutes

Total Time, including cooking and cooling: 2 hours, 30 minutes

Ingredients-

  • 1 cup Sugar
  • 1/2 cup Canola Oil
  • 2 Eggs
  • 1 1/2 cups Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/4 cup Condensed Milk
  • 2 Ripe Bananas, mashed
  • 2/3 cup Nestlé Toll House Espresso Morsels, tossed in flour

Method-

Preheat the oven to 350F. Oil a loaf pan.

In a mixer, blend the sugar and oil on low. Add the eggs, one at a time, beating well after each addition. Sift the dry ingredients together and add to the mixture in potions, blending after each addition. Add the condensed milk. Mix. Lastly, add the banana, mix until just combined. Remove the bowl from the mixer. Fold in the espresso morsels. Transfer the batter to the pan and bake until a knife comes clean. Approximately 1 hour and 15 minutes. (Begin checking at 1 hour.)
