A special breakfast sets the tone for the day! Nothing is better than a cozy morning with a giant cup of coffee, a warm, special breakfast, and pretty dishes and linens. Individually baked oatmeals just feel extra special! This one–Baked Blueberry and Coconut Oats from Waitrose Food magazine–is very simple, very healthy, and presents beautifully. If you’re not spoiling yourself with this recipe, you can present it to your family, or serve it as part of a nice ladies brunch. Not everyone may have 250ml ovenproof dishes, but feel free to bake in one larger dish and modify the baking time.

How to make it an A+: This is really nice. Make sure you’re serving a vanilla coconut yogurt. The SO Delicious yogurt is nice, and doesn’t leave an unpleasant film in your mouth that some coconut yogurts do. Do not over-bake! My oven did not need to go up to the 25-30 minute suggestion. Also, feel free to change-up the fruit, or even introduce a combo! I see raspberries in my future…
