I have been making Real Simple’s Bacon-Wrapped Pork Loin recipe for close to a decade, and have never been disappointed. It’s such a special dish that stands up to any dinner party, holiday, romantic event, or if your family is really lucky, a basic weeknight. It presents so beautifully–a single pork loin, covered with bacon, stuffed with dried cherries, parsley, and mustard, and glazed with vinegar and jelly–and offers so many explosions of flavor, while requiring minimal culinary skill, it’s just perfect.

How to make it an A+: A family favorite! Go by your temperature gauge, not just the suggested cook time. My latest pork loin was a little shorter and fatter than normal, and required an additional 20 minutes of cooking to get to the 150 deg F.
