What an ending to the weekend! The weather was on the warmer side for February which meant that we covered a lot of New York City ground! This tired mama didn’t want to prepare anything too crazy, so here is a Bacon-Potato Soup with Cheddar and Chives from Real Simple magazine! Perfect to enjoy on the couch with a big glass of wine.
How to make it an A+: This is really tasty, but the baked potato vibes make me want exactly that. And, what’s missing? Butter and sour cream! I would add some butter to the onion and garlic as they cook, and serve with either a dollop of sour cream or just add some heavy cream into the mix for a heartier soup. Lastly, sprinkle with additional salt and generously with pepper! Enjoy!
