Avgolemono (Greek Lemon and Egg Soup) with Orzo

Sundays often mean soup at my house. Or chili, or something slow-cooked. I just like the day to feel cozy and like a big hug, and that translates to soup for me. With that said, today I tried out Real Simple’s Avgolemono (Greek Lemon and Egg Soup) with Orzo. It is definitely warm, cozy, and feels good for the soul–it’s just not the biggest showstopper. Check out my suggestions below.

How to make it an A+:  This soup bored me. Not sure what the soup tastes like from a traditional Greek establishment, or if it gets any more exciting, but this one needs a generous amount of salt and pepper, to say the least. Maybe a stock instead of a broth. And at the risk of totally butchering a traditional Greek meal, I would suggests adding a more exciting meat. Perhaps some ground turkey or pork–even small meatballs to the mix? If you’re sick, though, this mild lemon, chicken orzo soup, will definitely warm the body!
