These noodles are AMAZING. This Cravings cookbook, by Chrissy Tiegen, is right up my alley, and every dish has been more delicious than the last. The only modification made from the original recipe was the use of pad thai rice noodles instead of wide, but after looking in four NYC grocery stores, I gave up. Still great, just a slightly different appearance. Enjoy this easy dish that makes you think you’ve mastered Asian cuisine.
How to make it an A+: I would love a little salty crunch on top, so would add some chopped peanuts. Also, in addition to the broccoli and mushrooms, some thinly sliced strips of onion would be nice.
